    腊猪脚

    千好万好,咸菜最好。一咸抵百味。我想了一下,好象腌的素菜无论干湿只要够咸都可以称咸菜,腌后风干的肉类才叫腊味。不然绍兴的霉干菜晒了蒸,蒸了晒,比谁都干,干吗不叫腊菜?腊,从月旁,肉月肉月,古人造字果真不假。腊月腊月,就是晒腊肉的那个月吧,我猜。
     
    中国菜里,凡是好用腊味的基本都是充满了乡土气息。家乡板鸭,土匪鸡,腊口条,好象怎么做也上不了台面。芝士(火局)腊猪脚?迷迭香烤奶油腊猪脚?怎么听都别扭吧,还是农家大锅炖腊猪脚对味。烟熏火燎的腊味充分反映了已经过去的那些时代物质是多么紧缺人们对食物有多么珍爱。吃不完,舍不得,都用大粗盐给腌上,逢年过节有朋自远方来的时候全家老少就指望着那些腊味犒劳一下五脏庙。以前我们家就每年过年都晒腊猪脚,吃腊猪脚=过正月在我的心里就跟北方人觉得吃饺子=过大年一样神圣不可侵犯。小的时候吃过的东西最香。这都21世纪了,我勤劳的妈妈还每年腌咸肉,晒腊货,忙个不迭,然后千里迢迢地从福建给我送到北京来,因为她觉得我爱吃。
     
    我才不管什么腌制熏制食品高盐容易导致高血压,含亚硝酸盐容易致癌呢。以前的人,一年就吃那么两回肉,每天都是饭吃七分饱,干的活锻的炼都比现在多,吃点腊味死不了人。现如今少吃点就是了。再说了,也不是什么都能做成好吃的腊味的。我就喜欢啃些有筋骨的,翅膀,鸡爪,鸭掌,鸭脖,猪蹄——这些部位不肥不瘦,有皮有肉,还经常锻炼!可只有猪脚SIZE合适,肥瘦得当,能够成就腊中极品的美味。
     
    冰箱里放的那腿腊猪脚,明天我打算做一半——山药焖腊猪脚。这可是我们闽北山区人民镇家待客的宝菜之一。此菜咸鲜适口,腊香极浓。猪脚油光可鉴,同时含有软烂、丰腴、柴绵、弹牙、劲道等多种口感。山药软糯爽口,吸收了猪脚的汁液,有滋补功效。此菜的汤底拿来拌饭,那不是一般的香!只有小时候爱吃的红烧肉汤汁调饭或者是新出炉的热饭拌猪油加酱油才可匹敌……说到这我想跑题一跑。大文豪苏轼有个很有名的打油诗,大概是这么说的:宁可三月无肉,不可一日无竹。无肉使人瘦,无竹使人俗。此话不可全当真,因为苏大文豪他不仅很懂得吃还很会做,发明了大名鼎鼎的纯荤菜——东坡肉。不爱吃,就不会做;最爱吃,才能做出最好。东坡肉有几个很需注意的地方,一是不讲究用精瘦肉,反而要求连皮带肥的;二是不加一滴水(绍酒不算水啦,那个也是谷物精华来着)。如此熬出来的东坡肉其实就是最高级的红烧肉,出的汤汁堪称精华!吃完以后我打算拿另一半来做汤,材料我都已经想好了,如果不是因为这个季节没有好笋,我一定要用使人不俗的竹子的后代——鲜竹笋来配老枪慢火下的腊猪脚。把腊猪脚片得一片一片之后,看奶白色的汤里漂着红色的腊猪脚片,玉色的笋片,再给它起个不乡土的名字——什么赤壁汤、东坡汤之类,就算我做失手了,也一定色香味具佳。现如今只好下冬瓜片加干贝,合时令又清淡,只是在北京我还不知道干贝上哪买去。自己想出来的,算不算私房菜呢?菜谱就先不公开了,你们也别惦记着来俺家蹭这一顿了,炊具常在,腊味难得,有客无酒,有酒无肴,月白风清,如此良夜何!等我试验成功以后,欢迎老饕们明年来我家品尝,哈。
